Mama's Pull-Apart Dinner Rolls

Thanksgiving is just around the corner and I have been getting lots of emails and requests for dinner rolls.  This is my favorite recipe.  I haven't been feeling that great so I don't have a picture.  I will try to post a picture here before Thanksgiving.  Tomorrow I am hoping to post my two new Pumpkin Pie Recipes.  Stay tuned!

Mama's Pull-Apart Dinner Rolls

Ingredients:


1 cup warm water
1 Tbsp. yeast
1 tsp. sugar

2¾ cups Mama’s Almond Blend Flour or Coconut Blend Flour
¼ cup sugar
1 tsp. salt
1½ tsp. xanthan gum
2 Tbsp. butter OR dairy free margarine, melted OR grapeseed OR canola oil
1 egg
1 tsp. cider vinegar
Egg white, (for wash, optional)
1 tsp. water

Egg Free Option:

¼ cup water
1 Tbsp. ground flaxseed

Simmer water and flaxseed over medium low heat for about 5 minutes until thickened.  Stir frequently.  Allow to cool.  This is equal to one egg. 

Directions:  Preheat oven to 400 degrees. 


Mix together warm water, yeast, and sugar.

In a mixing bowl, mix together flour, sugar, salt, and xanthan gum. With mixer running on low speed, pour in yeast mixture. Add melted butter, egg and cider vinegar. Mix on high speed for 2-3 minutes.

Spray 8 or 9 inch round cake pan with cooking spray. Place 1/3 cup measures of dough in the center of pan.  (Using a 2 inch scoop makes this much easier and prettier) Smooth tops with rubber scraper, or use wet fingers to smooth out tops. Cover with dry towel for 1½ hours.

Baste tops with egg white mixed with water. (Egg free baste with warm water for a nice crust.) Bake for 26-28 minutes and tops are golden brown. Allow to cool for 20-30 minutes before serving.

GFM TIP:  After basting with egg white wash or warm water sprinkle sesame seeds, flaxseeds, or rosemary for an added burst of flavor and appearance.  

For better success making rolls, invest in a 2 inch scoop.  It is easier, less messy and looks much nicer.

Thank you so much for this recipe. I have been searching for some good and easy gluten free rolls and here they are! I actually bought your cookbook before finding your website. I am lucky enough to be able to buy your flour blends locally @Central Market. My favorite blend. I was about to give up. I am not a good enough cook to figure this stuff out on my own.

I used this recipe which I found on the back of the almond blend GF flour. The look and texture was right but the rolls had a rubbery chew to them as well as a slightly bitter aftertaste. What (if anything) did I do wrong? Suggestions?

Well I am new to the gluen free life and I am experimenting with new recipes. I thought this one looked easy to make but I guess it wasn't , they came out like little golf balls . I followed everything to the letter but had to make some changes with sugar and and egg since I don't eat either. I did use what was required to start the yeast. I consider myself very experienced in baking, the dry to wet ratio looks off to me but perhaps I am too GF naive to know. I will make a second attempt and seriously follow the recipe without any changes. Hopefully they turn out well. The flavor was good just a bit dense

I made these and they turned out wonderful! I did not have your four blend so I created my own, still, I'm very happy with how moist these are that they actually did rise!!! Thank you!
